Breakfast Bake

Trim Healthy Mama Cross Over / (with Keto / Low Carb / Gluten Free Options) / Family Favorite

This breakfast bake is perfect for a Saturday morning treat but really any day of the week. If you do not have sourdough bread you can use a French baguette (but this will make it off plan, for my THM followers) or you can skip the bread all together and still a great Keto / Low Carb option, that’s delicious.

Ingredients

  • 1/2 pack bacon
  • 4 cups cubed sourdough bread
  • 8 eggs
  • 1 cup nut milk (unsweetened)
  • 4 tbsp sour cream
  • 1/2 lb breakfast sausage, crumbled
  • 1 large onion, diced
  • 1 colored pepper, diced
  • 2 cups Mexican style cheese
  • salt/pepper

Instructions

1. Preheat oven to 325.

2. Chop bacon and cook until crispy (about an hour before I throw the bacon in the freezer, it’s easier to chop it). Drain fat and set aside. Reserve the fat.

3. Saute onion and pepper. Set aside.

4. Cook sausage, drain and discard fat.

5. Grease pan with coconut oil (spray), add bread and drizzle with reserved bacon grease. Top with cheese.

6. In a large bowl whisk eggs, milk and sour cream. Add pepper/onion mixture and sausage. Add a little salt and pepper.

7. Pour mixture over the bread/cheese. Top with bacon. Cover with foil.

8. Bake 45 minutes. Remove foil and bake an additional 15 minutes.
